One of my favorites from Sushi Dito is the Black Dragon. It’s a roll with kanikama (crab meat) and cucumber rolled with sushi rice and nori (seaweed). On top of the roll is a generous piece of unagi (eel) with eel sauce and some more nori. It’s served in a platter with the pieces formed like a dragon. Clever.
